Cucumber Mint Aqua Fresca
Because the hotter summer temperatures are around the corner, I decided I would share this delicious, cooling drink recipe with you. The Cool Cucumbers, Tart Lime and rehydrating Coconut Water make this the perfect summer drink. It is so refreshing, it will be your new go-to recipe to keep you cool on super hot summer days.
Ingredients:
3 Cucumbers
1/2 cup of fresh squeezed lime juice
1 1/4 cup of fresh mint leaves, woody stems removed
1/4 cup of agave nectar
1 1/2 cups of water
1 1/2 cups of unsweetened Coconut Water
Pinch of Salt-optional, but I think it makes the agave taste a little sweeter
Tools:
A good blender-I use my Blendtec, but my sister in law prefers her Vitamix
A large Fine Mesh Strainer
How To:
Wash your cucumbers, mint leaves and limes. Peel the skin off the cucumber. Cut into rough cubes, about 1/2″ big and toss in blender. Juice your limes until you have about 1/2 cup ( probably 8-10 limes ). Trim the stems off your washed mint leaves and throw in blender. Add 1 1/2 cups water, 1 1/2 cups coconut water, and the 1/4 Agave. Blend until very smooth. Strain into large fine mesh strainer, over a bowl, or wide-mouth pitcher. Serve over ice and garnish with wedge of lime.
