Mock Rosemary Paloma Fizz
This drink is so pretty and summery and seriously refreshing! It is the perfect drink to serve for a special occasion or dinner party. The recipe is simple, but it does take a little bit to prep all the ingredients and but I promise this Rosemary infused simple syrup is totally worth it!
For those of you that haven’t made a simple syrup, don’t worry – it is totally easy! This recipe made about 2-3 drinks depending on your glass size and how much Topo Chico you top the drink off with.
For the Simple Syrup:
1/4 cup Sugar
1/4 cup Water
1-2 Fresh Rosemary Sprigs
For the Drink:
Grapefruits: I used about 3-4 and juiced them to make about 1/4 cup of juice
1-2 Tablespoons of Rosemary Simple Syrup
Topo Chico-about 1/2 a bottle per drink, but you can add more if desired.
Crushed Ice-FYI-you can buy bags of this at Sonic
1 Sprig of Rosemary, as garnish. I used one per drink
Margarita Salt: Optional, but I rimmed my glass with it for a better presentation.
To Make the Simple Syrup
by adding sugar, water and the rosemary to a pot. Bring it to a simmer on the stove, stirring constantly to make sure that the sugar doesn’t burn. Dissolving the sugar will take about 2-3 minutes. Strain into a sealable container. I used a small mason jar with a lid. Let the simple syrup cool to room temperature before using. You can store the remaining simple syrup in the fridge for a month or so.
To Assemble the Drink
, juice the fresh grapefruits to make 1/4 cup. Strain out any seeds of pulp with fine mesh strainer. Add 1-2 Tablespoons of simple syrup to each glass. Fill the glass about 1/4 full with grapefruit juice and stir the mixture with a stirring stick, straw or spoon to combine. Fill the glass with 1 sprig rosemary, crushed ice and top off with Topo Chico. Enjoy!
